In recent years there have been important changes in the eating behavior of human beings as a result of the interaction of economic, cultural, political, social factors and individual characteristics of individuals. These interactions between variables have generated problems that demand the attention of trained researchers with a multidisciplinary vision.
It is necessary to consider the loss of control over the development of diseases and their consequences, directly linked to food. It is urgent to rethink the way in which the food phenomenon is addressed and find the answers to: What is failing? Why do it seem that the measures (food policies, therapeutic procedures, etc.) aimed at preventing, controlling and treat nationally important diseases like obesity and malnutrition don't work? It is necessary to call for reflection on some aspects that will help to regain control of the diet-development of disease relationship. These are the study, description, evaluation, characterization, analysis and experimentation of eating behavior.
Considering the health effects of changes in eating behavior, it is important to train human resources that provide knowledge about this problem. The multidisciplinary perspective is the main characteristic of the Doctorate in Behavioral Science with orientation in Food and Nutrition since it contemplates in its academic training model, the conjunction of different perspectives that address the food phenomenon. Undoubtedly, this is a distinctive feature that will allow the development of trained researchers who provide a solution to the current problem of eating behavior.
